Last week my new boss took us to Rockcreek in Fremont neighborhood in Seattle. Super excited to try a new spot and I noticed it is up the street from my favorite Seattle bookstore, the Book Larder. We had several terrific dishes at Rockcreek (smoked oysters and aioli on toast, key lime pie in a jar, blackened tuna and grits to name a few) but my favorite was the shaved cauliflower and pecorino salad. You basically take a mandolin and shave a purple organic cauliflower with shaved pecorino cheese. I made the dressing my way this weekend: high quality olive oil, cream, shallots, salt, rice wine vinegar and a touch of lemon—all done to taste. Shave the pecorino or parmesan with a peeler so they are wide like the cauliflower. Toss in dressing and enjoy.
