David Chang even has a video of himself making it on YouTube. I watched it and decided I had to do it. I hate to admit, it really is good. I made it for a friend last week and made it for my family. It can definitely go in my cookbook from last year—Mama’s Little Secret, a collection of all those recipes that you don’t want to tell your healthy organic mom friends. Use organic chicken to make you feel better? I did. His method is to dry rub chicken with sugar and salt overnight. I like to use boneless thighs but any part will do. Next day, coat with buttermilk and crushed ramen mixture (yes he even uses the flavor packet). Fry and eat. Even when you don’t do the overnight salting/sugar or coat in buttermilk, it tastes goods. Try it.
