The other night our team went to Momiji on Capitol Hill in Seattle and we had chicken Karaage. It wasn’t the best but it wasn’t the worst. Chicken Karaage is basically fried chicken Japanese style. It’s easy to make and perfect when you need to eat on the go. Marinate small pieces of chicken thighs in soy sauce, minced ginger, minced garlic, sugar and sake (if you have it). Coat with potato starch and fry at 360 degrees until golden brown. Serve with lemon slices. The best popcorn chicken you’ll ever have. Try Marc’s recipe if you want to get exact proportions.
