Charcuterie anyone?

I was at the library this weekend and a book in the “new non-fiction” section caught my eye: Olympia Provisions. Of course I was thinking it was about food in Olympia, WA only to discover it is the beautiful story of a brother and sister, Michelle and Elias Cairo, who teamed up to start two “simple and honest restaurants that serve the kind of food and drink most people want to have every night, plus a fast-growing charcuterie business.” Elias came to Portland via Switzerland with strong Greek roots. He gives readers the six crucial elements for preserving meats. If you are hankering for a hunk of Mortadella, it even has a recipe for that! I always wondered how they got those little circles of fat into the meat!
