We were never a pancakes family. In fact, I don’t think my mother ever served me pancakes. We were all about the eggs for breakfast—scrambled, poached, fried. As a child my dad made us popeye eggs and I just saw them being sold in a fancy coffee shop. This prompted me to introduce my kids to this delicious egg breakfast this week. Get a really nice bread—brioche, sourdough, levain. Any will do. Slice and use a biscuit cutter to make a circle in the center. Butter the pan and put bread in a frying pan then crack an egg into circle. Toast the cut out circle in the same pan. When the egg is set on the bottom, flip over and flip the toasted circle. Serve warm.
