Last week I had friends over for what I think is the most boring but classic meal you can make: whole roasted hen. I wanted something a little more fun to snazzy it up and served it with roasted leeks and fennel. Not bad. The next week I had roasted fennel and cauliflower. Equally as delicious. So don’t be scared of that little bulb in the grocery store or farmers market—buy it. Wash it. Slice it and roast it with whatever you like. It’s a great side dish.
