When I make ice cream, I don’t even mind if the kids eat it for breakfast. This week a good colleague from the office gave me some peaches from his tree—that is probably the most precious gift you can give me! Peaches are one of my favorite summer stone fruits and his were super ripe. By the time I got off the plane, I had smashed them so I peeled them and scooped out the flesh, pureed it and made ice cream with them! I used the same base as the caramel ice cream recipe sans the caramel (but that would work too). I stirred the pureed peaches into the ice cream base. When you can see tracks as you move your finger across the back of a wooden spoon, remove from heat, strain and put in an ice bath. Refrigerate and freeze according to your ice cream maker instructions. To serve for breakfast, take your homemade unsweetened yogurt that of course you have made using my Peace Corps method and scoop the ice cream in the center. Sprinkle with additional brown sugar if necessary or granola.
