Some people wonder if I allow my kids to eat junk food. This is probably the only way that I allow Fritos in my house! Chili Pies and Ice Cream is the culprit who introduced my kids to this dish. We always stop there on our way home from the De Young in Golden Gate Park. I made this version of the dish this weekend when I noticed a mysterious bag of Fritos had appeared in the house while I was in Seattle. It’s one of the rare times where I can see both my boys eat a whole bowl of salad. Ingredients: shredded baby gems or romaine lettuce, sliced sun gold tomatoes, chopped bacon fried with lean grass fed ground beef until dark and crispy, sour cream, salsa, grated cheddar cheese and Fritos. You can use any ingredients your kids like (no meat, beans, avocado, etc.). The trick to being OK with this as a healthy mom is to get the proportions right: 75 percent salad ingredients, 5 percent Fritos, 5 percent sour cream, 5 percent salsa and 10 percent meat, beans or other protein and cheese.
